"You Are What You Eat"

Hilltop Hanover Visit
This past week, seniors in "Thinking Globally, Acting Locally" (taught by Director of Community and Global Partnerships Yom Fox) and "You are What You Eat" (taught by History teacher Kevin Slick) traveled to Hilltop Hanover Farm in Yorktown Heights, New York to tour the farm and witness sustainable agriculture firsthand, watershed management, and participation in the local food pathway. Students also prepared and enjoyed a vegetable stir fry made from the farm's produce. Hilltop Hanover Farm also participates often in the Dalton CSA (Community Supported Agriculture).

Beyond Meat 
Students in the high school elective "You Are What You Eat: A Critical Investigation Into Food Production, Consumption, and Justice" (taught by Kevin Slick) spent time in the Teaching Kitchen with Chef Charlie Forster Stewert this week exploring industrial meat production and consumption. The investigation entailed a consideration of the economic and cultural factors shaping modern meat consumption and the environmental impact of such practices. 

To further illuminate the ideas under examination, Teachers Bob Sloan and Joaquin Ramsey made guest appearances in the kitchen, as well. Mr. Ramsey demonstrated the science/chemistry behind Chicken McNuggets (as a way to illustrate highly-processed foods) while Chef Stewert made chicken meatballs inspired by the well-known chef Ottolenghi. Both were hands-on activities for students. Mr. Sloan helped the class explore beef and beef alternatives, and students helped prepare the foods they consumed while thinking about sourcing and preparation.
