PopFood Class Restaurant - Sold Out Again!

On Saturday, January 12, and with four pre-fixe seatings sold out, Dalton's Popfood class, taught by Charles Forster and Bob Sloan, presented another fabulous Popup restaurant, inspired by Blackberry Farm, a beautiful, sweeping, estate in Tennessee. The popfood curriculum sets a real-world challenge to create and manage a real restaurant, for one night.
Among hundreds of details the class set the budget, ordered the food, set prices, menus, decor and prepared an impressive and gorgeous meal including:
  • cheeses, cured and smoked meats
  • apricot cherry mostarda
  • lamb meatballs
  • local farm salad
  • winter squash soup
  • bacon-glazed carrots
  • duck two ways
  • wild mushroom risotto
  • barbecued ribs
  • grass fed meatloaf
  • cornish game hen
  • brussel sprouts
  • skillet pear crisp
  • giant coconut cake
  • baked butterscotch pudding
  • and
  • mom's chocolate chip cookies.
