Students in HS History Teacher Kevin Slick’s "You Are What You Eat: A Critical Investigation Into Food Production, Consumption, and Justice" class and several members of the History Capstone Program, guided by HS History Teacher Dr. Shira Kohn, explored aspects of NYC's complex and wonderful food systems on November 16.
First, students traveled to the Union Square Greenmarket to peruse seasonal offerings and to shop for a meal to prepare in Dalton's Teaching Kitchen. After shopping, students ventured to the Urban Hawker Market (a Singapore street food center in midtown Manhattan) for a delicious lunch.
Sufficiently fortified, students then walked through Central Park to the NY Historical Society for the exhibition, “I’ll Have What She’s Having”: The Jewish Deli" to understand the evolution of a unique food culture and its culinary and cultural significance.
The following day, the students transformed their Greenmarket haul of okra, cauliflower, squash, radicchio, hot peppers, fennel, and pantry staples in the Teaching Kitchen into seasonal specialties. Senior Elena Osse '23 conceptualized the menu, and Chef Jaz helped the students with the preparation.
